ABSTRACT

Pandemic crises like the coronavirus disease 2019 (COVID-19) have severely influenced companies working in the Agri-food industry in different countries. Some companies could overcome this crisis by their elite managers, while many experienced massive financial losses due to a lack of the appropriate strategic planning. On the other hand, governments sought to provide food security to the people during the pandemic crisis, putting extreme pressure on companies operating in this field. Therefore, the aim of this study is to develop a model of the canned food supply chain under uncertain conditions in order to analyze it strategically during the COVID-19 pandemic. The problem uncertainty is addressed using robust optimization, and also the necessity of using a robust optimization approach compared to the nominal approach to the problem is indicated. Finally, to face the COVID-19 pandemic, after determining the strategies for the canned food supply chain, by solving a multi-criteria decision-making (MCDM) problem, the best strategy is specified considering the criteria of the company under study and its equivalent values are presented ​​as optimal values of a mathematical model of canned food supply chain network. The results demonstrated that "expanding the export of canned food to neighboring countries with economic justification" was the best strategy for the company under study during the COVID-19 pandemic. According to the quantitative results, implementing this strategy reduced by 8.03% supply chain costs and increased by 3.65% the human resources employed. Finally, the utilization of available vehicle capacity was 96%, and the utilization of available production throughput was 75.8% when using this strategy.

ABSTRACT

Four waves of the Covid-19 epidemic have drastically affected consumer behaviors in Vietnam, particularly during the period of social distancing in the second half of 2021. This study was done to investigate changes in household food acquisition and consumption patterns in Ho Chi Minh City. During the most severe wave of Covid-19 in Vietnam, an online poll was used to collect data from 130 customers in Ho Chi Minh City. Before Covid-19 (before January 2021), food was primarily purchased from traditional markets and other direct methods. After Covid-19 occurred (since January 2021), changes in food acquisition methods were found as 52% of respondents went to the grocery stores, traditional markets, and supermarkets less often. Moreover, consumers have changed their online shopping behaviors as 48% bought more food online compared to pre-Covid-19 periods. Since Covid-19, surveyed households consumed less food, specifically fresh produce (44.6%), fast food (60.8%), canned food (37.7%), prepped meals (60.8%), grains (43.1%), and snacks (43.8%). In opposition, more frozen foods (46%) and more meat (47%) were consumed since the pandemic. From the estimated ordinal probit regression, the study found that the determinants that most explain changes in food consumption are age, household size, education, income, affected income, workplace status, and the afraid of food shortage.

ABSTRACT

Canned fish products are of great economic importance for many countries and are preferred by consumers due to their rich nutritional composition and beneficial health effects. The steps of canning process and formulation vary depending on the species processed and the desired end product. This work is an overview of the current research investigating the effects of canning process, several preprocessing treatments and formulation on the nutritional composition, sensory characteristics and microbial quality of the end product. Key findings of recent studies on health effects and potential risk factors associated with the consumption of canned fish products are presented. Moreover, the global demand for canned fish products is increasing due to the changing consumption behavior and healthy eating habits of consumers after the pandemic. This review summarizes the major challenges that need to be addressed for meeting the increasing demand for canned fish products. Finally, based on the findings of current studies reviewed, the perspectives and research gaps for canned fish products are stated. Copyright © 2022-IOS Press. All rights reserved.
